Frozen Pastries Directions
Storage
Keep pastries frozen immediately upon delivery and store frozen until ready to proof and bake.
Proofing Instructions
Remove pastries from freezer the night before baking. Allow pastries to proof at 80°F–90°F for approximately 2 to 3.5
hours, or until fully proofed and soft to the touch.
Baking Instructions
Lightly egg wash before baking. Bake between 300°F–325°F until golden brown and fully baked.
Approximate bake time: 20 minutes depending on product and oven.
Bake Pastries, Breads, and Bagels
Storage
Store products in an airtight container. Ziploc-style bags work well for maintaining freshness. If refrigerating or
freezing, double-wrap products to protect quality and moisture.
Reheating
For best results:
• Toast bagels before serving
• Pastries and breads may be refreshed in a toaster oven, standard oven, or light warming oven
Avoid microwaving when possible for best texture and crust quality
